Description
The Mustard alba is an annual herbaceous plant belonging to the Cruciferae family. It has an upright stalk up to 60 cm, streaked and branchy. The leaves are alternate, with toothed margins and petiole. The flowers are yellow. The fruits contain small spherical seeds of a brownish color. The alba mustard (white) has a less spicy flavor than black mustard.
It prefers a dry, well drained and sunny soil. It does not tolerate moisture. Water as needed.
Of the mustard seeds are used which, once ripe, are collected and dried and reduced to powder. The flour must be kept dry in such a way that it does not lose its characteristics. We also use the young leaves and the newly bloomed inflorescences for food use.
In the kitchen are used the leaves and the flowered tops for soups. From the seeds of white mustard the famous spicy “mustard” is prepared. The classic mustard is nothing more than a set of fruit (usually apples and pears), sugar and mustard essential oil with a very strong taste that is usually combined with salty foods.
